Christmas Cake Recipe

 Christmas at the Takemoto household has always been a wonderful time. Since we are Japanese, we eat Kentucky Fried Chicken for our meal instead of turkey (though there's been some years where we went a little more "American" and cooked a turkey... with teriyaki sauce to add a Japanese touch.) But we don't eat a traditional sponge cake with strawberries for dessert. We have this tradition that we make a chocolate cake every year, and this year I'm gonna share it with you guys. I know Desmond loves it.

Ingredients:

  • Betty Crocker cake mix (anything chocolate)
  • 1 1/4 cup of water
  • 1/2 cup vegetable oil
  • 3 eggs
  • Whipped cream
  • Peanut butter frosting
  • Peppermints
  • Sugar (THE SECRET INGREDIENT... but don't use too much or it'll be bad!!)
Instructions:

  1. Spray pan with cooking spray and heat oven to 350°F.
  2. Mix the chocolate cake, water, oil and eggs in large bowl, and stir. Then, sprinkle some sugar in the bowl. Pour into pan.
  3. Bake for 40 minutes or until toothpick isn't wet. Cool 10 minutes before removing from pan. Cool completely before frosting and adding the whipped cream and peppermints.
